Making an old favorite recipe.
Aromatic Shrimp with Cilantro-Lime Cream Sauce
1 cup loosely packed, chopped cilantro
1 Tbs fresh minced ginger root
2 cloves garlic
2 scallions chopped
1 jalapeno (de-seeded and chopped)
1 tsp sugar
1/2 tsp salt
3 Tbs mild vegetable oil
3 Tbs Lime juice
1-2 lbs med or lg shrimp
1 cup heavy cream.
In food processor, combine cilantro, ginger, garlic, scallions, jalapeno and process until finely chopped. Add sugar, salt, oil and lime juice & mix well. Toss shrimp in mixture until well-coated & put in fridge for one hour. Spoon shrimp out and saute lightly until barely cooked. Arrange on serving plate and chill.
Add marinade to liquid from cooked shrimp and boil, stirring until liquid evaporates, leaving thick, green puree. Add cream and boil again, stirring constantly until thick enough to pour, and chill.
